Tremella polysaccharides are a group of bioactive, water-soluble polysaccharides derived from the fruiting bodies or mycelia of the Tremella fuciformis, a jelly-like fungus commonly known as snow fungus or silver ear fungus. These complex carbohydrates are composed of various monosaccharide units linked together by glycosidic bonds.

The primary active component of Tremella polysaccharides is a glucuronoxylomannan, a linear heteropolysaccharide that consists of glucose, mannose, and glucuronic acid residues. The structure typically exhibits a backbone of 1,3-linked α-D-mannopyranosyl and 1,3-linked β-D-glucopyranosyl residues with side chains of β-D-xylopyranosyl, α-D-glucopyranosyl, and β-D-glucuronopyranosyl units.
